It’s been so hot recently that it’s been hard to think of what food to eat, let alone what to cook. As we near the end of a sweltering few months I’ve been savouring those summer treats that I miss so dearly once the season ends – namely fresh raspberries. After finding an organic pick-your-own field a few weeks ago I couldn’t resist returning to stock up on those flavourful little berries.
What better combination than fresh raspberries, sweet apple juice and Tea and the Gang’s Miss Yoga (chamomile) to keep you cool and calm in the summer sun. These ingredients make the most gorgeous ice lollies that not only taste delicious and fragrant, but look absolutely beautiful. The colour palette is like a sunset. They’re ridiculously easy to make as well, the only hard part is waiting for them to freeze!
INGREDIENTS:
Makes 8 x standard size (3oz, about 10cm tall) lollies
- 2 x Miss Yoga chamomile tea bags in 1/2 cup/125ml boiling water
- 1.5 cups/350ml apple juice
- 2 tbsp maple syrup/agave nectar
- 1.5 cups/175g raspberries (fresh)
- One handful fresh mint, chopped
INSTRUCTIONS:
- Pour the boiling water over the tea bags and leave to brew for 15 minutes to allow the chamomile to really infuse the water.
- Remove the teabags and pour the tea into a measuring jug, adding the apple juice and maple syrup. Stir the liquid until combined.
- Divide the liquid between the 8 ice lolly moulds and finish them by pushing the fresh raspberries and mint into the top of each mould. Freeze for approximately 4-6 hours until solid, and enjoy!
