What better combination is there, than a gingerbread cookie flavoured tea and cheesecake?

What I like the most about making cakes is letting the creativity flow through my mind, while creating the designs.

I got inspired by the traditional English Victoria Sponge Cake I discovered on a trip in Ireland. It’s a light and fluffy sponge cake which is also known as Victoria Sandwich.
